2. Freeze-Drying Process for Strawberries
Freeze-drying is a modern drying technology that helps retain the maximum shape, color, flavor, and especially the nutritional value of the product. The freeze-drying process for strawberries includes the following main steps:
- Raw Material Selection: Only fresh, uniformly ripe, undamaged, and high-quality strawberries are selected.
- Pre-processing: Strawberries are washed thoroughly, stems and leaves removed, and then can be sliced or kept whole depending on requirements.
- Flash Freezing: Strawberries are flash-frozen at very low temperatures (approximately -30°C to -50°C). This process converts the water in the strawberries into small ice crystals.
- Freeze-Drying: The frozen strawberries are placed in a vacuum chamber. Here, the pressure is reduced to an extremely low level, causing the ice crystals in the strawberries to sublimate directly into water vapor without passing through a liquid phase. This gently removes water from the product, preserving its cellular structure.
- Packaging: After freeze-drying, the strawberries are immediately packaged in airtight containers for preservation, preventing moisture absorption from the surrounding environment.

3. Nutritional Value of Freeze-Dried Strawberries
One of the outstanding advantages of freeze-drying technology is its ability to retain almost all the nutritional value of fresh strawberries. Freeze-dried strawberries remain rich in:
