3. Famous Types of Vietnamese Pepper:

  • Black pepper: The most common type, harvested when the berries are ripe and sun-dried whole. Black pepper has a pungent taste and characteristic aroma.
  • White pepper (pepper corn): Processed by soaking to soften the outer skin, then rubbing off the skin, leaving only the white inner core. White pepper has a milder, cleaner spiciness than black pepper.
  • Green peppercorns: Immature pepper clusters harvested early. Green peppercorns have a fresh, slightly spicy taste and are often used in fresh dishes or pickled.

4. How to Properly Make White Pepper:

To obtain beautiful, high-quality white peppercorns, the processing procedure needs to be carried out carefully:

  1. Harvesting: Select evenly ripe, disease-free pepper clusters.
  2. Soaking: Soak the pepper in clean water for about 7-10 days to soften the outer skin. The soaking process needs to be checked regularly to ensure the pepper does not become waterlogged.
  3. Skin Rubbing: Use a pepper skin rubbing machine or manual methods to remove the outer skin. This should be done gently to avoid breaking the peppercorns.
  4. Washing: Wash the skinned pepper thoroughly several times with clean water to completely remove skin residue.
  5. Drying: Sun-dry the pepper or use a machine to dry it at a suitable temperature until it is completely dry and ivory white.
  6. Sorting: Select the beautiful white peppercorns and remove any broken or substandard ones.
